It has been horrible weather this winter. It has been raining pretty much non-stop and there has been hail for a few days now. Whenever I go to my daughter’s school to drop her off or pick her up, I get soaking wet even if I drive! There isn’t much space for parking near the school, so, by the time I park my car and walk to the school, you get wet anyway. Hopefully, it gets warmer soon.
As I haven’t seen the Sun in about three months I thought I would warm myself up with some spicy chicken. Dakgalbi (spicy chicken) is from Chuncheon in the northeast of South Korea. It is about a five hour drive from my hometown. There are Dakgalbi restaurants in my hometown, but, sometimes, we went to Chuncheon to eat Dakgalbi and stayed around for the weekend. It is a lovely town.
When I was working in Korea, my workmate said to me, “When I was in college, I had a boyfriend from Chuncheon. The people from Chuncheon barbecue Dakgalbi on a grill instead of stir frying it in a pan. His family took me to a restaurant where locals go to. The chicken was grilled. It was super tasty!”
After that conversation, I thought I should try it. We have a barbeque grill. The sauce is pretty easy and quick to make and the taste is super delicious. My husband loves it sooo much that we could just eat this without any side dishes.
It is too spicy for my kids. So, I grill some chicken with just salt and pepper or Dwaejigalbi sauce for them. If you want to check out my Dwaejigalbi recipe, follow this link. https://www.gildedgingerbread.com/dwaejigalbi/
Enjoy this lovely warming recipe. Hopefully it will bring some sunshine into your kitchen until the real Sun does. Let me know how you get on.
