The long summer vacation is nearly over. I hope all of you had a great vacation! Kids start school in September in the UK. In my home country, South Korea, the academic year starts in March. Starting in March is like seeing the start of a whole new year. Starting in Spring, there will be Summer, Autumn and Winter. I used to love Spring and the excitement! I remember the excitement of going back to school and meeting my new classmates (we got mixed up every year) and thinking of what my new class teacher is going to be like… Do you remember that time?

KOREAN VEGETABLE FRITTERS

As a mum, I want to make a lunchbox for my children that is tasty as well as healthy for them. I don’t want them to chuck their lunch away in school and tell me that they ate it all!. Yes, yes, I did it to my mum… I feel sorry for my mum…. If lunchboxes are not interesting for kids, there are possibilities for them not to eat them. Instead of getting shouted at by your mum when you get home, there is a way to sort it out, throwing them away when mums don’t see them. Also, if kids don’t eat their lunch in school, they are not going to be in a great condition to study well. I want my kids to enjoy their food and also, preferably pack what they like, instead of packing crisps and ready made sandwiches and snacks.

There are a lot of lunchbox ideas out there! But, I want to share some healthy, quick and easy recipes for you. A good tip is to make their lunch box look interesting as well as taste great. You can mix and match the ingredients if your child doesn’t like a particular thing. If the only veg your child likes is sweetcorn, swap out the avocado and you have a delicious chicken and sweetcorn wrap that will taste delicious but will also look amazing. I have kept things simple, but cutting the fruit and veg sides into finger food shapes they like will go a long way towards your child eating healthy and feeling great. These recipes are also great for grown ups’ lunchboxes as well as picnics. Enjoy!

BACK TO SCHOOL LUNCHBOX IDEAS

What You'll Need
  • Ham and Cream Cheese Wrap
  • 1 Large Wrap
  • 2 tbsp Cream Cheese
  • Handful Spinach
  • 2 Slices Ham
  • 5 Strawberries, hulled
  • Handful Blueberries

  • Chicken and Avocado Wrap
  • 1 Large Wrap
  • 2 tbsp Hummus
  • 2 Thin Slices of cucumber (sliced lengthways)
  • 50g Cooked Chicken (You can use leftover roasted chicken)
  • Half an Avocado, sliced into quarters.
  • Handful Cherry Tomatoes

  • Vegetarian Wrap
  • 1 Large Wrap
  • 2 tbsp Hummus
  • Handful Spinach
  • 70g Carrots, grated
  • ¼ Cucumber, sliced
How to Make It
  1. Ham and Cream Cheese Wrap
  2. Put the wrap on a chopping board.
  3. Spread cream cheese all over the wrap evenly.
  4. Lay the spinach on top of the cheese.
  5. Put a piece of ham in the middle right hand side of the wrap and another on the left.
  6. Roll the wrap tightly, cut into 6 pieces and arrange them in a bento/lunch box.
  7. Mix the hulled strawberries and blueberries to make a delicious side dish.

  8. Chicken and Avocado Wrap
  9. Put a wrap on a chopping board.
  10. Evenly spread hummus around the whole wrap.
  11. Put cucumber slices in the middle.
  12. Add the cooked chicken on top on the cucumber.
  13. Lay the avocado slices on the top of the chicken.
  14. Roll up the wrap tightly. Spread a bit of hummus on the edges so the wrap will stick together.
  15. Cut the rolled up wrap into 6 pieces and arrange them in a bento/lunch box.
  16. The cherry tomatoes make a delicious side dish.

  17. Vegetarian Wrap
  18. Put a wrap on a chopping board.
  19. Spread the hummus evenly over the whole wrap.
  20. Lay the spinach on top of the hummus, put carrots in the centre and roll them up tightly.
  21. Cut the rolled wrap into 6 pieces and arrange them in a bento/lunch box.
