My daughter’s new favourite Kimbap recipe! Enjoy this quick and easy Kimbap with your children or just for yourself! It is perfect for lunchboxes, bento boxes and Halloween parties!
What You'll Need
  • 400g Cooked Rice (Must be short grain sticky rice. Long grain won't work)
  • 1tbsp Sesame Oil
  • ½ tsp Table Salt + a Pinch of Table Salt
  • 1 Frankfurter Sausage
  • 2 Large Eggs
  • 3 squares of Nori Seaweed (20cm*19cm)
  • A little water to stick the seaweed.
How to Make It
  1. Mix the cooked rice, sesame oil and ½ tsp of the table salt in a bowl. Cover the rice with foil or cling film so that it doesn’t get too dry and set aside.
  2. Slice the sausage into 4 strips length ways. Set aside.
  3. Whisk the eggs with a pinch of salt.
  4. Pour the egg mixture into a frying pan over a low heat. When the egg mixture is 80% cooked, roll the omelette up and set it aside.
  5. Brown the two middle slices of sausage in a frying pan for a couple of minutes.
  6. Slice the egg roll length ways into three equal size strips. You will only need two of the strips so choose the best looking ones.
  7. Cut two of the squares of nori seaweed in half. You will now have four rectangles and one large square of Nori. For the next step you will only need three of the four rectangles.
  8. To make the eyes for your kimbap, lay a rectangle of Nori on a chopping board. Place a strip of rolled up omelette along the nearest long edge of the rectangle and roll the omelette up in the nori as tight as possible. When you have nearly finished rolling it up, slightly wet the remaining long edge of the rectangle with water so that it sticks when fully rolled up. Just dip your finger in a small bowl of water and run along the edge. When it’s rolled up, you want it to resemble a seaweed cigar!!! Repeat this again for another strip of omelette and the sausage slices which will be the mouth. I only needed 1 ½ slices of sausage so how much you use will depend on the length of your sausage. J
  9. Lay your sushi mat flat on your work surface. Put the large square of nori seaweed on the mat. Arrange a thin layer of rice on the half of the seaweed that is closest to you. You need the rice to completely cover the half but it must be a thin layer.
  10. Put the rolled sausage in the middle of the layer of rice and completely cover with another thin layer of rice.
  11. Lay the rolled egg slices either side of the rolled sausage, leaving a bit of a gap and cover with one more layer of rice.
  12. Using the sushi mat, roll the Kimbap up tightly and again wet the edge so that it sticks well. Once rolled, brush a little sesame oil on the outside of the Kimbap.
  13. Leave for 4-5 minutes for the Kimbap to firm up. Brush some sesame oil on your sharp knife. This makes it easier to slice the Kimbap as it won’t stick to the blade. Alternatively, you can use a little water. Cut off the untidy ends and slice the Kimbap into 6-8 circular pieces. Enjoy your scary and delicious Kimbap for your Halloween party! Your kids and your guests will love them!
Kimbap is best eaten straight away as it can dry out quickly. Always keep it well covered if you are preparing ahead.
