Spring onion, carrot and cabbage omelette, ham and cheddar cheese sandwiched between butter toasted bread. A great on the go street toast breakfast that has taken South Korea by storm. Yum!
What You'll Need
  • 4 Large Eggs
  • A pinch of Sea Salt
  • A pinch of Pepper
  • 1 Spring Onion (15g), finely chopped
  • 35g Carrots, finely chopped
  • 100g Cabbage, finely chopped
  • Butter
  • 4 Slices of Bread
  • 40g Cheddar Cheese, grated
  • 4 Slices of Ham
  • Ketchup
How to Make It
  1. Put the eggs in a bowl and add the salt and pepper. Whisk until mixed well.
  2. Add the spring onions, carrots and cabbage to the egg mixture. Mix them well.
  3. Heat a frying pan over a low heat, spread some butter around the pan and pour in the egg and vegetable mixture. Try to shape the egg/veg mixture into a rectangle. It gets easier as the eggs cook.
  4. When the omelette is cooked on one side, cut it in half and flip each one carefully. When they are cooked, remove them to a plate.
  5. Wipe the frying pan with some kitchen towel, add a little more butter and toast the bread. When one side is done, flip them over and start to toast the other side.
  6. Add the cheese to two slices of the bread. Lay the omelette and ham on top of the cheese and spread on some ketchup while the bottom side of the bread is toasting. Work quickly so you don’t burn the underneath.
  7. When the bread is toasted on the bottom, put the other slice of toast on top of the ketchup to make a sandwich. Repeat with the remaining slice. Now, your toast is ready to go! Enjoy it with a glass of milk or a cup of coffee. It is perfect for a lazy weekend breakfast. ^^
